Add the "%" character in a posting is not possible to save...

Do you mean adding % in the post content? It works. In your case, It may be a conflict with some plugin.Try disabling all plugins and check it.

It looks like the % symbol might trigger some overzealous security rule on your server. Please try the support forums for troubleshooting: ​http://wordpress.org/support/.
