How would you go about doing it?
You may not start the update, but if you do, then cancelling it midway could create an undefined limbo situation.
In such case, a better option would be a rollback button. Then any plugin update would start by making a backup copy of the current version, before the upgrade happens.

Looking at the screenshot, it seems the request here may be to ignore the update?

I'm closing this as wontfix, for the two different interpretations of this:

  • "Ignore Update" - We don't want to encourage users to ignore updates, it's in the users (and the web's) best interest to keep plugins/themes updated to improve security and fix bugs
  • "Cancel Update during update" - This is something that isn't possible to do once the update process has started, at a technical level, there's no way for a user-initiated request to abort the update process.
  • Rollbacks - See #37301 - that's the best ticket I can find, but there's an older ticket closed as wontfix for installing older versions of plugins I believe, same reasons for wontfix as ignoring the update above.
