Hola
If a put an image and then a text center, the text appear al left
When I try to write the text, the line begins to run in the page

This would be related directly to the theme. If you want the Typo authors to change that, you could contact the AitThemes support to see if they would edit that.

Otherwise, if you have the Additional CSS option in your theme customizer (Personalizar > CSS adicional), you could paste this line there to center all caption text in the image blocks:

 .wp-block-image figcaption { text-align: center; }
