Hi,
Using Gutemberg is pretty impossible to remove a link from a text, because the link options are appearing over the toolbar.

To help you right now, the keyboard shortcut for adding or removing a link is Ctrl + K on Windows (or Cmd + K on MacOS). Correction: Removing a link is Ctrl + Shift + K.

Link editing popover covers the formatting toolbar when link is near bottom of viewport (Windows + Chrome, with Yoast)

Thanks. I was able to reproduce the problem with other themes, too. It also happens with and without Yoast SEO's extra link options.
For me, it only seems to cover the toolbar's Unlink button when the link text is positioned lower the window/viewport. Of course, it can still cover a smaller part of the toolbar when positioned in other areas of the screen.
Anyway, block editor bug reports belong on GitHub so the team can fix them there. I found this similar issue, but that's specifically with smaller screens.

@SGr33n Which theme are you using? Also, could you upload a screenshot of the editor with the link options opened?
