We should update Tested up to in readme.txt file for the latest version 5.8

Changed "Tested up to: 5.7" to "Tested up to: 5.8" in all the bundled themes readme.txt

I opened a pull request to go through the workflow, it patches one extra file, src/wp-content/themes/twentytwentyone/assets/sass/01-settings/file-header.scss

Bundled Themes: Update the "Tested up to" value.

"Tested up to" is not displayed on the theme directory or within the WordPress dashboard, but should be updated to be accurate for anyone reading the theme's source code.
