Description
I'm testing the WP 5.9 RC1 version on the staging website of one of my clients. When I open the page editor, the text on the Cover block is now black by default (instead of white) and isn't readable anymore. It happens for the majority of the images (the overlay opacity is set to 50). My client's site would require changing manually the text color on hundreds of cover images.
You can reproduce the issue by inserting a Cover block. Example of one of the images I'm using:

The issue can be replicated using the Twenty Twenty theme. I've also tested with the new Twenty Twenty-Two theme, and the same issue happens.
With WordPress 5.8.3
With WordPress 5.9 RC 1

Hello @marctison75,
Welcome back to WordPress Core's Trac! Thank you for reporting this issue.
There is an open issue for this bug reported in upstream in the Gutenberg project https://github.com/WordPress/gutenberg/issues/37031. The fix will be made there, package published, and then, when ready, the new package update backported to Core.
I'll close this ticket as reported upstream. Please follow the progress in that issue. Thank you!
Moving into 5.9 for investigation.
