Patterns: Register new media related categories

As patterns continue to be enhanced, additional default categories for media-related patterns have been desired. Two new categories, Audio & Videos, were added in Gutenberg via ​https://github.com/WordPress/gutenberg/pull/55236.

This ticket tracks syncing that PR to core.

Syncs the changes from ​https://github.com/WordPress/gutenberg/pull/55236.

These changes introduce two new media related default pattern categories, Audio and Videos.

To test:

1. Activate TT3
2. Open the site editor's patterns page (Appearance > Editor > Patterns)
3. Create a new pattern and confirm the category selector suggests both Audio and Videos
4. Try adding patterns to each of these categories and confirm they display in both the site and post editors.
