Page Template setting lost and reverted to Default

Description
I believe this has happened since the latest update to the TwentyTwentyFive theme.
Prior to this update, I had one page which was set to the page template 'Elementor Canvas' (being used with the Elementor plugin to handle the entire design of the page).
I updated the TwentyTwentyFive theme, and since then the page template has reverted to 'Default'.
What's more, when going to the page editor, the 'Template' option in the right sidebar has changed, and no longer shows the dropdown list of page templates, but instead shows a new list - of which all options do NOT show the available page templates.
The only way to put the page template back, was to go back to the editor list, and 'Quick Edit' the page, where I could then see the normal page template dropdown.
My concern is that this instantly broke / changed the design on the website, from just updating the theme I Was using, which shouldn't have happened.

I tested this issue and it seems it exists.
When a page is created with the Elementor Canvas template, it can be changed in the quick edit list. However, in the page editor under the template selection section, it is not viewable.
Tested in:
WordPress Version 6.8.2 Elementor Version 3.32.1 Twenty Twenty-Five Version: 1.3
