Templates Editor - Can't create a template for a specific category

Hi, I've been trying to create product templates in woocommerce for specific product categories. I am using a blocks theme (child of twenty twenty-five) so this is via the editor. The old system had a dialogue box where you could select that you wanted the template for the specific category, but this version that dialogue box seems to be missing and I can't find any other way to do it.
Actually while I am on to this, the whole system is a bit clunky. When I accidentally created a standard product category template, there was pretty much no way to see which one that was in the interface. No creation date for example. There's also no duplicate, you can change the category these apply to after. There's no folders to organise templates etc etc.
Really though, what I'm interested in is creating custom product category templates and at the moment there seems to be no way to do it.

It is not possible for other contributors to reproduce this issue without more information.
Please add detailed step by step instructions, like, where to click, and information about which WordPress version you updated from and the WooCommerce version.

Are you absolutely sure you selected the option that says "For a specific item" and not "For all items"?`
Only "For a specific item" has that list of category names. Sometimes it can take a second for the list to load.
