No way to define default page template

Description
The twenty eleven theme is quite nice but there is no way to define the default page template. For a website that needs a sidebar on every single page it is a hasle to have to set (and not forget to doit) the page template to sidebar.

Ok this is too weird. It works now.
I have a multisite install, and 2 sites on it. Each of them was using it's own theme.
It seems that at some point in time the secondary site was "assigned" the theme of the main site but only in the admin...if I was looking at the site outside of admin it was using the right theme ( no doubt about it since it's a in a different language ).
Another weird thing is that the theme that was now "assigned" ( the theme of the main site ) in admin also contains some custom templates but still none of them were displayed in the page editor. Those templates were available however when I was editing the pages of the main site.
It seems that the activation of the main theme in the secondary site was a fake, but it did influence the way the templates work in the page editor.
So I went in Admin -> Appearence and switched the theme to the right one and now I'm able to see the page template dropdown box again in the page editor.
I have the same problem, but I have a different theme.
I have a page which has a custom template assigned to it since a previous wordpress version. That still works but I'm not able to change the custom template, there's no way to do that from the page editor and there's no way to set the template for new pages.
